By identifying, evaluating,and screening the potential of coffee cascara, this project aims to generate new value and income opportunities.
A lot of the waste occurs at farm level, where wet fruit pulp and wastewater pollute soil and groundwater. Farmers struggle to make a living from coffee sales, yet they do not utilize the whole fruit, wasting 9 million tonnes of fruit pulp annually.
The coffee fruit contains high-value ingredients, but today it is impossible to extract these from the coffee cascara.
